Who hasn't pulled into a drive through when they're short on ideas for dinner? Many of us will sacrifice the long-term nutrition benefits for the short-term taste bud party fast-food can provide simply because it is easy.

Well I say screw that noise.

I can count on one hand the number or times I've eaten fast-food in the last 2 years and my stomach/thigh areas have thanked me for it. So if you're craving some sloppy fast-food cuisine, try out this quesadilla instead. Plus, this quesadilla slams your traditional drive through option: 342 fewer calories, 18g less fat, NO trans fat, and 661mg less sodium*. And it tastes awesome; what's not to love?

Ingredients:

Flour Tortillas: 4
Chicken breast: 4 oz
Mozarrella cheese: 3/4 cup
Feta cheese: 1 tbsp
Fresh spinach: 1/2 cup
Yellow bell pepper: 1/4 of pepper
Onion: 1/4 cup

Directions:

Grill or boil your chicken (I use a foreman grill. It takes about 10 minutes if the chicken is frozen when you put it on the foreman grill). While the chicken is cooking, chop up the pepper and onion and sauté them in a pan (I don't use oil as I have non-stick pans). Sprinkle with cayenne pepper to give the quesadillas a kick.

Once they're cooked through, remove them from heat. Check on your chicken. If it is done, remove from heat to cool (if not, keep cooking them).

Now steam or wilt spinach in hot water and drain. Your chicken should be done by now. Once it is cool, shred it up.

Mix all ingredients together and pack the tortillas with 1/4 of the mix. Place on the Foreman Grill and cook for 4 minutes.

And there you have it: delicious quesadillas that won't break the calorie bank.
